Banana nut muffins

These delicious morsels are packed with protein, are nice and moist and KID APPROVED (Always aiming for that). We chow these down for breakfast regularly.

Here is the recipe:

3 ripe bananas

3 eggs

1/4 cup brown or coconut palm sugar

1/4 cup veggie oil (I’ve used both coconut and olive successfully)

1 t vanilla

1 t of both baking soda & powder

1/2 t salt

1 t cinnamon

3 cups almond flour (not almond meal)

Preheat over to 350 and line 12 muffin tins or spray with oil.

  • In a large mixing bowl, add bananas and mash with a masher, hand beaters, food processor or just a fork.

  • Then add eggs, sweetener, oil, vanilla, cinnamon, baking soda, baking powder and salt, whisk to combine.

  • Add almond flour and stir and mix gently with spatula.

  • Pour batter into muffin tins and bake for 30 minutes or until the toothpick inserted in the middle comes out clean.

  • Let it cool another 10 minutes.
